Cooking basics for grass-fed beef

  • Bring meat to room temp (20–30 min).

  • Pat dry. Season with Hawaiian salt + pepper.

  • Sear hot, finish low (cast iron works great). Sear 3–4 min/side.

  • Rest 5–10 minutes. Slice across the grain.
